Messy Monday Cakes!

We’ve posted before about the benefits of cooking with children and yesterday we shared a photo of our weekend cake baking so I thought I would share the recipe and the photo of the final result…

Daddy’s birthday cake by the Littlesheeps



  • 150g Caster sugar
  • 150g Dairy free margarine
  • 3 eggs
  • 100g Rice flour
  • 1 teaspoon Baking powder
  • 50g Cocoa

Chocolate ‘butter’ cream:

  • 75g Dairy free margarine
  • 175g Icing sugar
  • 50g Cocoa


  • 250g Icing sugar
  • 30ml Water
  • Sweets


  1. Grease and line two sandwich tins and put the over on  to 180° C.
  2. Mix the sugar and margarine together until fluffy
  3. In a separate bowl mix the flour, baking powder and cocoa
  4. Stir the eggs into the sugar and margarine mix (adding some of the flour mix if it starts to look a bit curdled)
  5. Add the rest of the flour mix
  6. Stir and share between two tins
  7. Put in the oven for 15-20 minutes until firm
  8. Remove from oven and leave to cool on wire rack
  9. Mix the icing sugar, margarine and cocoa together in a bowl
  10. Beat until light and fluffy
  11. In another bowl mix icing sugar and water together until smooth


  1. Put one cake on a plate
  2. Cover with the chocolate butter-cream mix
  3. Put the next cake on top
  4. Cover with icing
  5. Decorate with favourite sweets
